Donc rien que des processus m\u00e9caniques.<\/p>\n<p>En effet, toute huile obtenue par action chimique ou solvants en est exclue.<\/p>\n<p>Il y a donc sur le march\u00e9 l&#8217;huile d&#8217;olive extravierge. On la reconna\u00eet car son acidit\u00e9 libre, en acide ol\u00e9ique, est de 0,8 grammes pour 100 grammes, avec le caract\u00e9ristiques conformes \u00e0 sa cat\u00e9gorie.<\/p>\n<p>Il y a ensuite l&#8217;huile d&#8217;olive vierge, dont l&#8217;acidit\u00e9 est de 2 grammes maximum pour 100 grammes, outre aux caract\u00e9ristiques conformes \u00e0 sa cat\u00e9gorie.<\/p>\n<p>Et encore, il y a l&#8217;huile d&#8217;olive constitu\u00e9e par un coupage d&#8217;huiles d&#8217;olive raffin\u00e9es avec des huiles d&#8217;olives autre que lampantes et l&#8217;huile de grignons d&#8217;olives.<\/p>\n<p>\u00c9videmment l&#8217;huile d&#8217;olive extravierge appara\u00eet imm\u00e9diatement comme un produit de qualit\u00e9 sup\u00e9rieure.<\/p>\n<p>Attention: l&#8217;acidit\u00e9, ainsi que d&#8217;autres param\u00e8tres, ne se rel\u00e8vent que par des analyses chimiques, tandis que les caract\u00e9ristiques organoleptiques (sensorielles) peuvent se d\u00e9terminer par d\u00e9gustation. Avec un peu de pratique on peut le faire chez soi. Sur le plan l\u00e9gislatif, les caract\u00e9ristiques sensorielles d&#8217;une huile sont \u00e9tablies par un &#8221;panel test&#8221; de d\u00e9gustateurs s\u00e9lectionn\u00e9s et form\u00e9s.<\/p>\n<p>En ce qui concerne la provenance du produit, on dispose des labels DOP et des IGP. En Italie ils sont plus de 40. Lorsqu&#8217;on ach\u00e8te une huile extravierge DOP on est certain de sa provenance car le produit a \u00e9t\u00e9 enti\u00e8rement r\u00e9alis\u00e9 et embouteill\u00e9 dans sa zone d&#8217;origine. En Ligurie existe l&#8217;huile DOP Riviera Ligure qui sort de trois zones: Riviera dei Fiori (province de Imperia), Riviera del Ponente Savonese (province de Savona) et Riviera di Levante (provinces de G\u00eanes et La Spezia). Les r\u00e8gles du DOP sont s\u00e9v\u00e8res, par exemple elles ne consentent que le 0,5 d&#8217;acidit\u00e9 au lieu du 0,8. Le go\u00fbt typique de l&#8217;huile ligure est surement doux, mod\u00e9r\u00e9ment amer et piquant le juste. Le piquant est signe de la pr\u00e9sence de polyph\u00e9nols, des agents antioxydants pour l\u2019huile comme pour notre corps.<\/p>\n<p>L&#8217;huile sur le march\u00e9 peut autrement \u00eatre italienne \u00e0 100% (mais elle ne peut avoir d\u2019ult\u00e9rieurs indications territoriales) ou un m\u00e9lange (blend), d&#8217;huiles communautaires, d&#8217;huiles communautaires et extracommunautaires ou de pays tiers seulement.
